Three Ways to Add Apples to Your Menu this Season
Fall is finally here! What better way to celebrate this festive season than with a menu full of flavorful, festive eats? Pick up a bag of apples and prepare your taste buds for a treat.
Quick and Easy Sparkling Apple Cider
You’ll need: 8 cups of fresh apple juice and 4 cups of club soda
Step 1: Use a juicer to make fresh apple juice. Refrigerate when done.
Step 2: Mix the fresh apple juice with the club soda. Serve immediately and enjoy!
Harvest Salad with Apple Cider Vinaigrette
You’ll need: 5 cups of chopped romaine lettuce, 1 cup of arugula, 5 slices of cooked bacon (chopped), 1 boneless and skinless chicken breast, 2 apples (sliced), 2 hard boiled eggs (sliced), 1 avocado (sliced), 1/2 of a roasted butternut squash (cubed), 1/4 cup of crumbled feta cheese, and 1/2 cup of candied walnuts
Apple Cider Vinaigrette: 3/4 cup of apple cider vinegar, 3/4 cup of olive oil, 1/4 cup of honey, 2 tablespoons of water, 1/4 teaspoon of pepper, and 1 teaspoon of salt
Step 1: Rinse the lettuce and arugula and place them into a large bowl. Add in the bacon, chicken, eggs, butternut squash, avocado, and apples.
Step 2: Toss the salad to mix the ingredients well. Then, sprinkle the candied walnuts on top.
Step 3: Whisk all of the Apple Cider Vinaigrette ingredients together in a small bowl. Once mixed, drizzle the vinaigrette over the salad. Serve and enjoy.
Apple Cider Coffee Cake
You’ll need: 1/2 cup of all-purpose flour, 1 cup of white whole wheat flour, 1 cup of apple cider, 1 cup of chopped tart apples, 1/2 cup of butter (melted), 1/2 cup of white sugar, 1/4 cup of brown sugar, 1 teaspoon of baking soda, 1 teaspoon of cinnamon, 1 teaspoon of vanilla extract, 1/2 teaspoon of baking powder, 1/2 teaspoon of salt, 1/2 teaspoon of nutmeg, 1/4 teaspoon of allspice, 1 egg
Glaze: 1/2 cup of confectioner’s sugar and 2 tablespoons of apple cider
Topping: 1/2 cup of brown sugar, 1/2 cup of all-purpose flour, 1/4 cup of white sugar, 5 tablespoons of butter, 1 teaspoon of cinnamon
Step 1: Preheat your oven to 350 degrees. Then, coat the inside of a 9X9-inch baking dish with non-stick cooking spray.
Step 2: Place a small saucepan on medium-high heat and bring the apple cider to a boil. After boiling temperature is reached, reduce the temperature to medium heat and allow the cider to simmer for about 10 minutes. Set aside or place in the refrigerator to cool.
Step 3: Take a small bowl and whisk together the baking soda, baking powder, both flours, nutmeg, cinnamon, salt, and allspice.
Step 4: Grab a stand mixer or electric mixer and cream together the butter and both sugars for the cake. Then, add in the vanilla extract, apple cider, and egg and mix well until the cake batter is creamy.
Step 5: Add the remaining dry cake ingredients and wet cake ingredients to the batter and beat until well-combined. Once combined, stir in the chopped apples.
Step 6: Begin preparing the topping by stirring the sugars, flour, and cinnamon together. Cut in the butter until the topping mixture is in the form of course crumbs.
Step 7: Spread the cake batter into the previously prepared baking dish. Then, sprinkle the crumb topping on top.
Step 8: Bake the coffee cake for 30 minutes.
Step 9: Mix together the ingredients for the glaze. Then, drizzle the glaze over the top of the cake. Serve and enjoy.
