Buffalo Cole Slaw
You’ll need: 1/2 head green cabbage (thinly sliced), 1/2 white onion (thinly sliced), 2 medium carrots (grated), 4 stalks of celery (chopped), 1 tablespoon of chopped chives, 1 cup of crumbled blue cheese (divided)
DRESSING: 1/4 cup of mayonnaise, 1/4 cup of apple cider vinegar, 1/4 cup of hot sauce, 1 teaspoon of garlic powder, 1/2 teaspoon of kosher salt
Step 1: Take a large bowl and combine the onion, cabbage, carrots, celery, and 3/4 cup of blue cheese. Then, stir the ingredients together until combined.
Step 2: Grab a medium sized bowl and begin preparing the dressing. Combine the hot sauce, mayonnaise, vinegar, salt and garlic powder. Then, whisk the mixture until well combined.
Step 3: Next, pour the dressing mixture over the cole slaw. Then, toss the ingredients to combine. Finally, garnish the slaw with chives and the remaining blue cheese.
Potato Salad
You’ll need: 3 pounds of yukon gold potatoes (chopped into 1-inch pieces), 1 small red onion (finely chopped), 4 hard boiled eggs (chopped), 1/4 cup of chopped pickles, 1/4 cup of finely chopped chives, 1 1/2 cup of mayonnaise, 1 tablespoon of lemon juice, 1 tablespoon of Dijon mustard, 1/2 teaspoon of paprika, freshly ground black pepper, and a dash of kosher salt
Step 1: Start by grabbing a large pot. Fill it with the gold potatoes and cover them with water. Sprinkle them generously with salt and bring the water to a boil.
Step 2: Cook the potatoes for about 15 minutes. Then, drain the water and allow them to cool.
Step 3: Now, take a large bowl and combine the Dijon mustard, mayonnaise, lemon juice, pickles, red onion, and paprika. Stir these ingredients together until well combined.
Step 4: Next, fold the potatoes, chives, and eggs into the mixture. Season to taste with salt and pepper and refrigerate. Serve cold and enjoy.
Cheeseburger
You’ll need: 1 1/2 pounds of ground beef chuck, 4 slices of cheddar cheese, kosher salt and freshly ground pepper, lettuce leaves, sliced tomato, sliced red onion, pickles, 4 hamburger buns, ketchup, mustard and/or mayonnaise (optional), and 1/2 tablespoon vegetable oil
Step 1: First, divide the ground beef into four sections. Season the sections of ground beef with salt and pepper. Form the ground beef into thick patties.
Step 2: Next, heat a large skillet to medium-high temperature and pour vegetable oil into the pan. Cook the patties until browned to your liking. Once cooked, top the patties with slices of cheese. Allow the cheese to melt before removing the burgers from the skillet.
